Gourmet meals...
Is a term that we hear far too
often!. It seems to have lost
much of it's meaning!
However the term does apply to
meals served on board the TIKO
TIKO. Everything served is
prepared by Capitaine Philippe.
He personally selects the side of
Beef that he then slices into the
hefty steaks he serves. He also
prepares his recipe for the
Buerre de Maitre D'Hotel (sort of
garlic butter) that he makes.
His salad dressing is made fresh
everyday from scratch. Served
with fresh French baguettes
from the bakery that morning.
The Capitaines Poisson
Provencal is prepared in a
sauce au tomate that he
prepares himself from the
freshest juiciest tomatoes
available. The carmelized onions
he flips in his pan are then
flambayed just prior to adding
the Creole chicken along with
his secret Curry milk sauce....
As sides he offers corn on the
cob and a baked potato
smothered in sour cream ... All
diet I'm sure ;)

Captains Tour
The new Capitaines Tour is
awesome. Having done the island
tour last year this new tour is way
cooler. It truly feels like a
Carribean Adventure. We left
Orient Bay and sailed around to
Friars Bay for a leisurely lunch at
Kali's. Kali the man is a local
legend who tells you that his place
has the "Taste of St.Martin" and
those ribs are amazing. After lunch
it depends on what the guests
want to do say take a dip in Happy
Bay otherwise we sail towards
Anguilla then sail towards St.Martin
then onto Tintamarre. When
sailing this way with the wind
blowing and all around you are just
the islands, Anguilla..
Saint-Martin.. Tintamarre.. St
Barths...it truly feels like a "Pirates
of the Carribean" adventure. Then
we drop anchor in Neptunes bay
on the far side of Tintamarre for
snorkeling and a quiet sail back to
Orient Bay...
This new cruise is not to be missed
if you enjoy sailing...
